I am a complicated person that's made up of many layers. I can be sweet, salty, tart, smooth, a little bitter, and mild all at the same time. I can be bold, nudging my way to the front to be heard, or subtly play my part. All of these things make me who I am, and when I conceptualize a dessert, I think of them. Vanilla is sweet, and depending on what type you use, it can be bold and salty, or subtle and floral. And Chocolate...I guess that would have been a way better example to use! Either way, I focus on each layer of my desserts. Wether its a simple Tart, or Entremet, everything is thought through. For me, the perfect bite has to have texture, salt, fat, acid, and heat (Heat?! YES! Its in the form of Baking Spices like nutmeg, cinnamon, cardamom). That sounds great, right? Well, not if they can't stand on their own. Thats why its important for me to make sure each layer is distinct, yet melds with the others. I am Ericka Xanthe, and These are my Layers...
